Chapter 5

Enzymes

Enzymes as biological catalysts, and how temperature and pH affect them — with an interactive exercise.

Enzymes are biological catalysts — proteins that speed up reactions in living things without being used up.

Each enzyme works best at a certain temperature and pH (its optimum). Very high temperatures denature an enzyme, changing its shape so it stops working.

Remember

  • Enzymes are catalysts (speed up reactions).
  • High temperature denatures enzymes.
